Nibblies will arrive at least an hour prior to your desired serve time
*** Food must be consumed within 4 hours of serve time ***
After 4 hours, do not refrigerate and consume any remaining food items later. Food is no longer safe for consumption if out in temperatures between 5'C - 60'C for 4+ hours.
If it has been out for less than 4 hours, food can be refrigerated and consumed later, but is only safe for the remaining amount of the original 4-hour window (i.e., refrigeration does not reset the "timer" but rather puts this on pause. The 4 hours TOTAL/COMBINED time outside of the fridge is safe, but outside of this timeframe is not safe for consumption).
*** Grazing Platters and Tables should be placed in and air-conditioned room ***
Spring and Summer catering is problematic on the Coffs Coast, due to the high temperatures and high levels of humidity. If you have the option to have your grazing table/platters in an air-conditioned room, this is preferred but not essential. If your event is outdoors in Spring or Summer, it is recommended that you opt for platters rather than a grazing table, with staggered serve times. This allows for each platter of food not being consumed, to be refrigerated and kept at a safe temperature for the duration of your event/designated serve time.
Food is generally safe for consumption when outside for up to 4 hours. However, deli meats and cheeses are easily spoiled when exposed to higher temperatures/humidity, and direct sunlight. If you have an outdoor event without the option mentioned above, please ensure the platters or grazing table is always kept in the shade, and able to be kept at a temperature below 24'C
*** Grazing Tables are to be provided by the client/venue ***
If you are choosing a grazing table, please note that Nibblies require a sturdy table to be supplied and set up in the required location. Nibbles supply platters, trays, bowls, knives and other utensils, as well as plates and serviettes, but we do not prove tables.
*** Styling requirements ***
Nibblies have a relatively rustic and earthy style. So, if you require a different style, please contact us directly, to discuss options available.
*** Hired items ***
All hired materials (boards, bowls, knives, stands, etc) are to be wiped clean and returned to Emeral Beach NSW within 3 busines days. If items are not returned in the same condition in which they are provided (or not at all), a $200 fee will apply
